Copper Rill Restaurant – Modern Upscale Dining in Idaho Falls

It was our last night of our twelve day road trip and we were spending the night in Idaho Falls. As with many of our meals on our trip through four states, I was interested in locating an upscale dining restaurant. For Idaho Falls I chose Copper Rill for their reviews, their chef stories and their online menu. They offered everything from wines, to cocktails, to an impressive looking appetizer menu.

My friend and I decided on the same cocktail to kick off our last dinner on the road. The Berry Drop Martini was a sweet and colorful way to start our meal. On the table were several starters including the baked brie stuffed with sundried tomatoes, curried chicken skewers and garlic shrimp with red pepper flakes. All of our dishes were flavorful and presented beautifully.

Bread and Butter

Dill Dinner Roll and Shamrock Butter


My favorite of the starters were the baked brie and curried chicken skewers. The chicken skewers were not heavy on the curry but they were still tender and flavorsome. The baked brie was appetizing, especially for us cheese lovers. It was creamy and easily spreadable on those toasty crostinis.

Curried chicken skewers served with a mild golden curry sauce with green onions and sesame seeds.


Sautéed Garlic Shrimp

Garlic shrimp sautéed in red pepper flakes, parsley and white wine butter sauce. Served with house made crostini.


Baked Brie Cheese

Baked brie cheese stuffed with sun dried tomato and basil compote. Served with house made crostini.


For our entrees, my friend who is also a cheese enthusiast ordered the Chevre goat cheese salad which she enjoyed very much. There were two pieces of goat cheese wrapped in puff pastry and served beside a seasonal salad. What was there not to like?

As for myself, I ordered the Copper Rill Salad which was a tasty and healthy accompaniment to my main dish. As for my main, I chose the ‘Special of the Day’ which was the Alaskan Halibut. I enjoy hearing the daily specials before I order because I usually change my mind from my dinner menu selection. It happens more often then not, really! My dinner choice did not disappoint as I was served a large piece of Alaskan Halibut that was fresh and cooked nicely. The last time I had fresh Alaskan Halibut was in Alaska, so this was a great treat.

Fresh Alaskan Halibut over rice and a side of seasonal vegetables.


My friend and I were planning on ordering a dessert or two off the menu since everything looked heavenly. Unfortunately, we were so full that we could grow that second dessert stomach. If whomever is reading this and decides to dine at Copper Rill, please save room and have one of the divine desserts for me!
